Apricot And Almond Tart Recipe

Ingredients
  • ALMOND FILLING .
  • 200 g dried apricots .
  • 100 ml brandy or grappa .
  • icing sugar, to dust .
  • 180 g butter .
  • cream, to serve .
  • 250 g flour .
  • 2 c sliced almonds .
  • 2 tbsps icing sugar .
  • 1 egg, lightly beaten .
  • 1 tsp flour .
  • 2 eggs .
  • PASTRY .
  • 115 g butter, chilled & sliced .
  • 1 tsp vanilla extract .
  • 3/4 c caster sugar

Directions
  • Step #1 PASTRY:.
  • Step #2 Sift the flour.
  • Step #3 Add the butter & rub it into the flour using your fingertips.
  • Step #4 Add the sugar & egg.
  • Step #5 Knead & gather the dough together, press the dough into a ball & wrap it in a plastic wrap.
  • Step #6 Refrigerate 15 mins.
  • Step #7 Grease 25 cm metal tart tin.
  • Step #8 Roll the pastry & line the tin.
  • Step #9 Refrigerate 15 min Preheat the oven to 400°F.
  • Step #10 <Line the pastry shell with baking paper & baking beads & bake for 14 min Reduce the oven to 350°F.
  • Step #11 Cook the dried apricots & brandy over low heat/flame for 5 min Leave to cool.
  • Step #12 to make the almond filling, in a food processor/blender cream the butter & sugar.
  • Step #13 Add the almonds, eggs, vanilla & flour.
  • Step #14 Do not over beat.
  • Step #15 Spoon the filling in the pastry shell & place the apricots.
  • Step #16 bake for 30- 40 min or until it is set.
  • Step #17 Cool & sprinkle with icing sugar.
