Ingredients
ALMOND FILLING .
200 g dried apricots .
100 ml brandy or grappa .
icing sugar, to dust .
180 g butter .
cream, to serve .
250 g flour .
2 c sliced almonds .
2 tbsps icing sugar .
1 egg, lightly beaten .
1 tsp flour .
2 eggs .
PASTRY .
115 g butter, chilled & sliced .
1 tsp vanilla extract .
3/4 c caster sugar
Directions
Step #1 PASTRY:.
Step #2 Sift the flour.
Step #3 Add the butter & rub it into the flour using your fingertips.
Step #4 Add the sugar & egg.
Step #5 Knead & gather the dough together, press the dough into a ball & wrap it in a plastic wrap.
Step #6 Refrigerate 15 mins.
Step #7 Grease 25 cm metal tart tin.
Step #8 Roll the pastry & line the tin.
Step #9 Refrigerate 15 min Preheat the oven to 400°F.
Step #10 <Line the pastry shell with baking paper & baking beads & bake for 14 min Reduce the oven to 350°F.
Step #11 Cook the dried apricots & brandy over low heat/flame for 5 min Leave to cool.
Step #12 to make the almond filling, in a food processor/blender cream the butter & sugar.
Step #13 Add the almonds, eggs, vanilla & flour.
Step #14 Do not over beat.
Step #15 Spoon the filling in the pastry shell & place the apricots.
Step #16 bake for 30- 40 min or until it is set.
Step #17 Cool & sprinkle with icing sugar.
