Southwestern Bbqed Pork (or Chicken) Salad Recipe

Ingredients
  • 1 bbqed pork chop, sliced thin on the bias .
  • BBQ Ranch Dressing .
  • 1/2 c prepared ranch salad dressing .
  • thinly sliced cucumbers .
  • 4-5 large lettuce leaves .
  • colby-monterey jack cheese, cubed or julienned .
  • 1 roma tomato, thinly sliced .
  • 1-2 tbsp sweet baby ray's barbecue sauce

Directions
  • Step #1 Place lettuce leaves, overlapping into large, shallow salad bowl.
  • Step #2 Place tomatoes & cucumbers around outer edge, overlapping.
  • Step #3 Place pork slices, overlapping in center.
  • Step #4 Top pork with cubes of co-jack cheese.
  • Step #5 Mix ranch & bbq sauce together, adding bbq sauce to taste.
  • Step #6 (*I only use Sweet Baby Ray's BBQ sauce, it is thick & slightly sweet.
  • Step #7 I wouldn't really suggest a hot, thin bbq sauce.
  • Step #8 )It should end up being about the color of thousand island dressing, or slightly darker.
  • Step #9 Make to your own liking.
  • Step #10 Drizzle salad with dressing mix.
  • Step #11 This is a meal in itself! :).
