Banana And Pecan Pancakes Recipe

Ingredients
  • 2 c buttermilk .
  • 3 bananas, peeled & sliced in 1/4-inch circles .
  • 4 tbsps sugar .
  • 1/2 c pecans, toasted & sliced VERY fine .
  • 3 eggs .
  • 2 c self-rising flour .
  • 1/4 c unsalted butter, melted .
  • 1 tsp pure vanilla extract

Directions
  • Step #1 Preheat the oven to the lowest setting (warm on an electric stove).
  • Step #2 In a large mixing bowl whisk the buttermilk, eggs, & vanilla together so they are well mixd.
  • Step #3 In a separate bowl mix the flour & sugar.
  • Step #4 Combine the wet ingredients with the dry & stir with a spoon to get rid of the lumps.
  • Step #5 Fold in the pecans, most of the melted butter & whisk until batter is smooth.
  • Step #6 Heat a griddle or skillet over medium low heat & swirl around a little melted butter to keep the pancakes from sticking.
  • Step #7 Using a ladle pour the batter into the pan.
  • Step #8 Cook the pancakes on 1 side until they are set & then lightly press the bananas into the batter.
  • Step #9 When small bubbles appear on the uncooked surface, flip the pancakes & cook this until golden on both sides, about 8 mins.
  • Step #10 Transfer pancakes to a warming plate in the oven while you make the rest.
  • Step #11 Serve with maple syrup & butter.
