Tomato Bisque Recipe

Ingredients
  • 1 (10 1/2 oz) can chicken broth .
  • 1 (11 1/8 oz) can Italian tomato soup, condensed .
  • 2 tsps dried tarragon or savory (leaves) .
  • 1 lb tomatoes .
  • 1 c water .
  • 1/4 tsp ground black pepper .
  • 2 tbsps fresh tarragon, Chopped .
  • 1/3 c unsifted all-purpose flour .
  • 1 (10 3/4 oz) can condensed tomato soup .
  • 2 tbsps butter or margarine .
  • 2 1/2 c milk .
  • 1/4 tsp salt .
  • 1 large onion (sliced) .
  • 1/2 c half-and-half

Directions
  • Step #1 In 4-quart saucepan, melt butter over med-heat/flame.
  • Step #2 Add onion & saute until tender.
  • Step #3 Stir flour, tarragon, salt, & pepper into onion until well mixed.
  • Step #4 Gradually stir in the undiluted broth & water until well mixd.
  • Step #5 Add tomato bits & heat mixture to boiling, stirring constantly.
  • Step #6 Cover up & reduce heat to low.
  • Step #7 Simmer soup 10 mins, stirring every once in awhile.
  • Step #8 Meanwhile, seed, peel, & dice tomatoes.
  • Step #9 Stir undiluted tomato soup, milk, & half-and-half into soup until well mixed.
  • Step #10 Increase heat to medium-high & heat soup until bubbles appear around side of pan.
  • Step #11 Do not boil.
  • Step #12 Stir in sliced tomatoes & heat through.
  • Step #13 Ladle soup into bowls.
