Thick & Spicy Soup Recipe

Ingredients
  • 1 c fresh carrots, thinly sliced .
  • 28 oz canned tomatoes, whole, crushed, undrained .
  • 1-1 1/2 tbsp Thai red curry paste .
  • 2 large fresh shallots, finely sliced .
  • 1 c fresh white potatoes, sliced .
  • 1 tbsp canola oil .
  • 1 tbsp fresh orange rind .
  • 2 tsps fresh ginger, minced .
  • 1 tbsp fennel seeds, crushed .
  • 1/2 c smooth peanut butter .
  • 1 1/2 c unsweetened coconut milk .
  • 2 fresh garlic cloves, minced .
  • 1 fresh scallion, finely sliced (garnish) .
  • 1/4 c dried apricots, finely sliced (garnish) .
  • 1 large sweet white onion, sliced .
  • 1/2 tsp sea salt, coarse .
  • 1 cinnamon stick .
  • 2 tbsps brown sugar .
  • 1 c canned unsweetened pumpkin puree .
  • 1 tsp red pepper flakes (garnish) .
  • 1 tbsp soya sauce .
  • 3 c chicken stock

Directions
  • Step #1 Heat oil in large pot, over med-heat/flame.
  • Step #2 Add fennel seeds, shallots & fry on medium heat for 1 min, ginger, sea salt, garlic, onions, orange rind, stirring constantly.
  • Step #3 Next add the red curry paste, stirring constantly, soya sauce & peanut butter, fry on medium heat for 1 min, don't let it burn.
  • Step #4 Quickly add chicken stock, tomatoe juice, pumpkin puree, brown sugar & cinnamon stick.
  • Step #5 Stir & bring mixture to a boil, lower heat & let simmer 20 mins.
  • Step #6 Add coconut milk & let simmer another 20 mins.
  • Step #7 Finally add the carrots, potatoes & crushed tomatoes, let the soup simmer for 40 mins.
  • Step #8 Once potatoes are tender, taste the soup & reseason this with salt and/or brown sugar if necessary, remove the cinnamon stick, according to taste.
  • Step #9 Pour soup into mixer & puree until the soup is smooth.
  • Step #10 Garnish with red pepper flakes, finely sliced scallions & sliced apricots.
  • Step #11 Serve as soon as possible.
