Step #5 Stir & bring mixture to a boil, lower heat & let simmer 20 mins.
Step #6 Add coconut milk & let simmer another 20 mins.
Step #7 Finally add the carrots, potatoes & crushed tomatoes, let the soup simmer for 40 mins.
Step #8 Once potatoes are tender, taste the soup & reseason this with salt and/or brown sugar if necessary, remove the cinnamon stick, according to taste.
Step #9 Pour soup into mixer & puree until the soup is smooth.
Step #10 Garnish with red pepper flakes, finely sliced scallions & sliced apricots.
