Apple Crisp A La Lydia Recipe

Ingredients
  • 1 c rolled oats .
  • 1 tsp ground cinnamon .
  • 2 tbsps fresh lemon juice .
  • For Topping .
  • 5 lbs granny smith apples .
  • 1 c unsalted butter, but into tbsps, softened .
  • 1 1/3 c pecans, toasted & sliced .
  • 1 c dried cranberries .
  • 3/8 tsp ground cinnamon .
  • For Filling .
  • 1 1/3 c all-purpose flour .
  • 1/2 c granulated sugar .
  • 3/8 tsp salt .
  • 3/4 c packed dark brown sugar .
  • 1/4 c granulated sugar

Directions
  • Step #1 Preheat oven to 375°F Lightly butter a shallow 3 1/2 to 4 quart baking dish.
  • Step #2 Topping: Combine flour, sugars, oats, cinnamon, & salt.
  • Step #3 Mix until well mixd.
  • Step #4 Add butter.
  • Step #5 I use a mixer but you can use a food processor/blender.
  • Step #6 Mix until it forms large clumps.
  • Step #7 With fingers work in the pecans.
  • Step #8 Filling: Whisk together sugar & cinnamon In a large-ish bowl.
  • Step #9 Peel, quarter, & core apples & then cut into chunks about 1/2 inch thick.
  • Step #10 Add apples, cranberries, & lemon juice to sugar mixture.
  • Step #11 Toss until well mixd.
  • Step #12 Assembly: Spread the apples in the buttered baking dish.
  • Step #13 Crumble topping evenly over them.
  • Step #14 Bake until topping is golden brown which takes about an hr & makes the house smell wonderful.
  • Step #15 Cool to warm & serve.
