Cuban Black Bean Patties Recipe

Ingredients
  • 2 c rinsed drained canned black beans .
  • 1/2 c shredded monterey jack cheese or jalapeno jack cheese .
  • 1/8 tsp salt .
  • 1 large egg white .
  • 1/3 c cornmeal .
  • cooking spray .
  • cayenne powder, to taste .
  • 1/2 tsp ground cumin .
  • 1/4 c sliced red onions .
  • Optional .
  • 1 tsp minced garlic .
  • 1/2 tsp dried cilantro

Directions
  • Step #1 Set aside 1/2 c of the beans.
  • Step #2 Place the other 1 1/2 c in a medium bowl with garlic, cumin, cilantro & salt.
  • Step #3 Partially mash with a fork.
  • Step #4 Place remaining 1/2 c of beans in a food processor/blender with the egg.
  • Step #5 Process for approximately 30 seconds or until well mixd.
  • Step #6 Add bean puree to slightly mashed beans in a bowl, & stir until mixd.
  • Step #7 Add cheese & onion, mix well.
  • Step #8 Divide the bean mixture into 4 parts.
  • Step #9 Shape each portion into a 1/2 inch thick patty.
  • Step #10 Place cornmeal on a plate or in a shallow dish.
  • Step #11 Dredge each patty in cornmeal until thoroughly but thinly covered.
  • Step #12 Heat a non-stick pan over med-heat/flame.
  • Step #13 Coat with cooking spray.
  • Step #14 Add patties & cook for approximately 4 mins on each side or until browned.
  • Step #15 Carefully move onto plates with a spatula.
  • Step #16 Serve hot, with sour cream & rice.
