Pepperoni And Cheese Rolls (made With Pizza Dough) Recipe

Ingredients
  • 15 slices mozzarella cheese .
  • 1 lb prepared pizza dough .
  • 2/3 c purchased roasted red peppers (rinsed & sliced) .
  • 4 oz sliced pepperoni (might use more) .
  • 8 tbsps grated parmesan cheese (1/2 c, or to taste) .
  • 1 large egg, lightly beaten .
  • black pepper .
  • olive oil .
  • salt (optional)

Directions
  • Step #1 Set oven to 400F degrees (set oven rack to second-lowest position).
  • Step #2 Prepare a large lightly greased baking sheet.
  • Step #3 Slice the pizza dough into 4 even pieces.
  • Step #4 Roll out 1 piece into a 10-inch round on a lightly-floured surface, then brush the top of the dough with a small amount of olive oil.
  • Step #5 Sprinkle top about 2 tbsps grated parmesan cheese over the dough, then black pepper to taste.
  • Step #6 Arrange one-fourth (in one even layer) of the pepperoni slices, mozzeralla cheese slices & then the roasted red bell peppers.
  • Step #7 Sprinkle top salt & black pepper over the peppers if desired.
  • Step #8 Roll up the dough round, then tuck ends under & pinch to seal.
  • Step #9 Prepare the three remaining rolls in the same manner.
  • Step #10 Arrange on a baking sheet.
  • Step #11 Brush lightly with egg, then if desired sprinkle lightly with kosher salt.
  • Step #12 Cut three (1/2-inch) slits into the top of the dough to allow steam to escape.
  • Step #13 Bake for about 25-30 mins.
