Ingredients
1 large onion, sliced .
1 c shredded mozzarella cheese (about 6 oz) .
1 tsp dried marjoram .
1 (10 oz) package frozen green beans (optional) .
1 green bell pepper, sliced .
6 garlic cloves, sliced .
1 tsp dried oregano .
2 c cooked chicken, cooked & cut into bite size pieces .
1 c white wine (I used Chardonnay) .
1 lb smoked sausage, sliced (fully cooked) or kielbasa .
1 (6 oz) can tomato paste .
2 c cubed potatoes .
1 (14 oz) can low sodium chicken broth .
1/4 c grated parmesan cheese .
rice (optional) .
1 tsp dried basil .
1 (14 oz) can stewed tomatoes, sliced .
1 (6 oz) can water .
1 red bell pepper, sliced .
1 c shredded cheddar cheese (about 6 oz) .
1/2-1 tsp crushed red pepper flakes .
kosher salt & fresh ground pepper
Directions
Step #1 Heat a large stock pot over medium to medium high heat.
Step #2 Cook sausage until nice & brown, about 20 mins.
Step #3 Remove sausage & set aside.
Step #4 Reserve 2 tbsps fat from pan.
Step #5 Sauté onions until tender.
Step #6 Add bell peppers & garlic & cook this until softened.
Step #7 Add wine, turn up heat & boil for 1 min.
Step #8 Reduce heat to medium.
Step #9 Add potatoes, water, basil & marjoram & let simmer until the potatoes are tender, broth, oregano, tomatoes, tomato paste, about 30 mins.
Step #10 Add sausage & chicken & green beans (if using) & let simmer uncover for about 20-30 mins.
Step #11 Add cheeses & serve over rice if desired.
