1 c colby cheese or monterey jack cheese or cheddar cheese or swiss cheese
Directions
Step #1 Prepare dipping sauce & chill in the fridge.
Step #2 In a skillet cook the bacon with the butter until almost crisp.
Step #3 Remove from skillet.
Step #4 Add onion sliced fine, steak sauce, garlic, sugar, & crushed pepper to the skillet & saute until onion is limp & translucent.
Step #5 Set aside.
Step #6 Heat oil to 350f, make sure the oil is hot enough so that when a fry is placed in the pan it cooks cook immediatly, if you don't have a thermostat, if the fry sinks to the bottom & barely bubbles it is not hot enough.
Step #7 Fry the potatoes in small batches, they are done when they float & are golden brown.
Step #8 Drain potatoes on paper towels.
Step #9 You can keep them in the oven to stay warm.
Step #10 When all the fries are done place them on an oven proof plater.
Step #11 Salt the fries.
Step #12 Top with the bacon crumbled & onion mixture, more steak sauce, & cheese.
Step #13 Place into a warm oven until cheese melts.
Step #14 Serve with the dipping sauce.

Step #16 You can cook your fries in the oven if you want for a fat free version, follow the directions on your bag of fries for the temps & times for this method.
