Fruit & Vegetable Pasta Salad Recipe

Ingredients
  • 2 tbsps soy sauce .
  • 1 tbsp vegetable oil .
  • 1/3 c frozen orange juice concentrate, thawed .
  • 1/2 tsp fresh gingerroot, peeled, minced .
  • 1 (20 oz) can pineapple chunks in juice .
  • 1 (16 oz) bag frozen stir fry vegetables .
  • 1 (12 oz) package tri-color spiral pasta

Directions
  • Step #1 Cook pasta according to package directions, then drain.
  • Step #2 While pasta is cooking, heat oil in 12" skillet over medium-high heat.
  • Step #3 Add gingerroot, & saute about 6 mins, soy sauce & frozen vegetables to skillet, stirring frequently, until vegetables are thawed & heated through.
  • Step #4 Place drained pasta, cooked vegetable mixture, pineapple chunks with juice & orange juice concentrate in large serving bowl, & mix well.
  • Step #5 Cover up & put in the fridge at least 8 hrs.
