1/3 c pitted bine cured green olives, halved lengthwise .
1 1/2 tsps fresh lemon juice .
2 tbsps fresh oregano, finely sliced .
1/2 c dry white wine .
4 pieces white fish fillets, boneless, skinless (1 1/4-inch thick)
Directions
Step #1 Pre-heat oven to 450 F & put your oven rack in the top third of the oven.
Step #2 Pat fish dry & sprinkle with salt & pepper.
Step #3 Heat 1 TBSP of the oil in a 12" heavy skillet over med-high heat, hot but not smoking, then sear the fillets on one side only, until brown.
Step #4 Transfer the fish, seared sides up, to a baking dish.
Step #5 Reserve the skillet.
Step #6 Top each piece of fish with a slice of lemon.
Step #7 Add the wine to the skillet & bring to a boil, scraping up any brown bits.
Step #8 Boil for 30 seconds & the pour around the fish.
Step #9 Scatter the olives around the fish & bake, uncovered, until fish is just cooked through, 8-12 mins.
Step #10 Transfer the fish to a platter & then whisk the lemon juice, oregano, & remaining 2 TBSP olive oil into the cooking liquid in the baking dish.
Step #11 Spice up with salt & pepper to taste, & spoon over the fish.
