Ingredients
3 green onions, sliced diagonally into 1/2 inch pieces .
1/4 c soy sauce, divided .
1 1/2 tsps rice wine vinegar .
1 1/2 tsps minced garlic .
2 1/2 tsps white sugar, divided .
1 tbsp cornstarch .
1/4 lb fresh shiitake mushrooms, stemmed & sliced .
1/2 (12 oz) package uncooked linguine .
1/4 tsp ground black pepper .
1 tbsp vegetable oil, divided .
1/2 c chicken broth, plus .
2 tbsps chicken broth .
1 1/2 tsps sesame oil .
1 tbsp minced fresh gingerroot .
1 tbsp rice wine vinegar, plus .
1/2 c water .
2 chicken breast halves, cut into thin strips
Directions
Step #1 In a medium, mix the chicken with 2 1/2 tsps of white sugar, non-reactive bowl, 1 1/2 tbsps vinegar & 1/4 c soy sauce.
Step #2 Mix this together & coat the chicken well.
Step #3 Cover up & let marinate in the refrigerator for at least 1 hr.
Step #4 In another medium bowl, mix the chicken broth, sesame oil & ground black pepper with the remaining sugar, water, vinegar & soy sauce.
Step #5 In a separate small bowl, dissolve the cornstarch with some of this mixture & slowly add to the bulk of the mixture, stirring well.
Step #6 Set aside.
Step #7 Cook the linguine according to package directions, drain & set aside.
Step #8 Heat 1 tbsp of the vegetable oil in a wok or large saucepan over high heat until it starts to smoke.
Step #9 Add the chicken & stir-fry for 4 to 5 mins, or until browned.
Step #10 Transfer this & all juices to a warm plate.
Step #11 Heat the remaining vegetable oil in the wok or pan over high heat.
Step #12 Add the ginger, mushrooms & green onions, garlic, & stir-fry for 30 seconds.
Step #13 Add the reserved sauce mixture & then the chicken.
Step #14 Simmer until the sauce begins to thicken, about 2 mins.
Step #15 Add the reserved noodles & toss carefully, coating everything well with the sauce.
