Butter Cake With Variations Recipe

Ingredients
  • 4 oz butter .
  • 1 tsp vanilla essence .
  • 1/2 c milk (I use a low fat) .
  • 8 oz self raising flour (2 c) .
  • 1/8 tsp salt (a pinch) .
  • 4 1/2 oz caster sugar (3/4 c) .
  • 2 eggs

Directions
  • Step #1 Grease a loaf tin.
  • Step #2 Preheat oven to 175 degree celsius.
  • Step #3 Sift flour & salt 3 times.
  • Step #4 In a mixing bowl cream butter & castor sugar with vanilla essence until mixture is white, light & fluffy.
  • Step #5 Add eggs one at a time & beat well after each.
  • Step #6 Fold sifted flour into creamed mixture alternating with milk, beginning & ending with flour.
  • Step #7 When mixture is smooth, pour this into prepared tin.
  • Step #8 Lightly smooth top & bake for 40 to 45 mins or until a fine skewer will come out clean.
  • Step #9 Cool cake on few mins before turning out onto a wire rack.
  • Step #10 VARIATIONS.
  • Step #11 Lemon Cake - add the grated rind of 1 lemon & 2 tsps of lemon juice, omit the vanilla essence.
  • Step #12 Orange Cake - add the grated rind of 1 orange & 2 tsps of orange juice, omit the vanilla essence.
  • Step #13 Sultana Cake - add 4 to 6 oz of sultanas & 1 tsp of spice.
  • Step #14 Seed Cake - add 1 tbsp caraway seeds to misture & sprinkle extra tsp of seeds on top before baking.
  • Step #15 Spice Cake - sift 1 tsp spice with flour, add 4 oz sliced dates or sliced walnuts to mixture.
  • Step #16 Chocolate Cake - add 2 oz of unsweetened chocolate, disolved in a little milk.
