Steak Au Poivre (morton’s) Recipe

Ingredients
  • 3 tbsps undiluted store-bought veal demi-glace (See note above) .
  • 1/2 c cognac .
  • The Steaks .
  • The Peppercorn Sauce .
  • seasoning salt, to taste .
  • 1 1/2 tbsps sliced shallots .
  • 1 tbsp unsalted butter .
  • 3 (18 oz) New York strip steaks, about 2-inches thick (or 3 Kansas City steaks) or shell steaks (or 3 Kansas City steaks) .
  • salt .
  • 2 tbsps cracked mixed peppercorns (red, green, white & black peppercorns, See note above) .
  • vegetable oil cooking spray .
  • 3/4 c heavy cream

Directions
  • Step #1 If making steaks & sauce at the same time, remove the steaks from the refigerator & let them rest at about room temp for 30 to 60 mins.
  • Step #2 In a sauté pan, melt the butter over low heat/flame.
  • Step #3 Add the shallots & peppercorns & sauté for about 5 mins or until the shallots soften.
  • Step #4 Add the Cognac, raise the heat to medium & cook this until the Cognac evaporates almost completely.
  • Step #5 Add ¾ c of water & the demi-glace.
  • Step #6 Bring to a boil, stirring until the demi-glace dissolves.
  • Step #7 Add the cream & bring to a simmer.
  • Step #8 Cook for about 5 mins, or until thickened.
  • Step #9 Spice up to taste with salt.
  • Step #10 Set aside to cool When cool, cover & put in the fridge for up to 3 days.
  • Step #11 Prepare a charcoal or gas grill or preheat the broiler & position a rack 4 inches from the heating element.
  • Step #12 Lightly spray the grill rack with vegetable oil cooking spray.
  • Step #13 The coals should be medium-hot for the charcoal grill.
  • Step #14 The burners should be on high for the gas grill.
  • Step #15 Spice up the steaks lightly on both sides with the seasoned salt.
  • Step #16 If using a CHARCOAL GRILL, grill for 10 mins.
  • Step #17 Turn, & grill the other side for 10 to 12 mins for medium-rare, using tongs, or until the desired degree of doneness.
  • Step #18 If using a GAS GRILL, grill for 10 mins.
  • Step #19 Turn, using tongs, & grill the other side for 11 to 13 mins for medium-rarely or until the desired degree of doneness.
  • Step #20 If using the BROILER, broil 4 inches from the heat source for 12 mins.
  • Step #21 Turn, using tongs, & broil the other side for 11 to 12 mins for medium-rare, or until the desired degree of doneness.
  • Step #22 Meanwhile, heat the peppercorn sauce if it’s not already warm.
  • Step #23 To serve, slice the steaks & spoon some of the sauce on top.
  • Step #24 Serve any extra sauce on the side if desired.
