Bryan's Chicken Provencal Recipe

Ingredients
  • 1 tsp herbes de provence .
  • 1 1/2 c crushed tomatoes in puree .
  • 1 1/2 tsps anchovy paste .
  • 1 roasting chicken, cut into eight pieces .
  • 1/2 c dry red wine .
  • 1/4 tsp pepper .
  • 1/2 tsp salt .
  • 4 garlic cloves, minced .
  • 1/3 c black olives .
  • 1 onion, sliced .
  • 1 fennel bulb, sliced .
  • 1 tbsp cooking oil

Directions
  • Step #1 Heat the oil In a large-ish skillet with a cover over moderately high heat.
  • Step #2 Spice up the chicken liberally with salt & pepper.
  • Step #3 Cook the chicken until browned, turning to brown on all sides, but not cooked through.
  • Step #4 Remove the chicken to a warm platter & cover with foil wrap.
  • Step #5 Pour off all but about 2 tbsp of the chicken fat.
  • Step #6 Reduce the heat to medium-low, & garlic, add the onion, & saute until onion starts to turn translucent.
  • Step #7 Add the wine & reduce by half, about 3 mins, scraping the bottom of the pan.
  • Step #8 Add the tomatoes, herbes de provence, season this with salt & pepper, olives, & anchovy paste, & let simmer for 5 mins.
  • Step #9 Add the chicken thighs & drumsticks & any accumulated juices; cover, & reduce the heat to low.
  • Step #10 Simmer for 10 mins.
  • Step #11 Add in the breasts & cook this until chicken is just done, 10 mins more.
  • Step #12 Correct seasoning & serve.
