Potato Stromboli Recipe

Ingredients
  • 1 medium onion, sliced .
  • 1 lb pizza dough, raised .
  • 2 large potatoes .
  • 1 garlic clove, crushed .
  • 1 tbsp olive oil .
  • 2 eggs, beaten .
  • salt & pepper

Directions
  • Step #1 Boil potatoes with skin on, for 15 mins, or until fork goes through easily (but potato is not mushy).
  • Step #2 Let potatoes cool for a few mins, peel skin, then cut potatoes in small chunks.
  • Step #3 Heat olive oil in large pan, add garlic & onions.
  • Step #4 Stir for 5 mins, then add potatoes, seasoning with salt & pepper.
  • Step #5 Let potatoes brown a bit (5 mins or so), then add eggs.
  • Step #6 Stir eggs in quickly & remove pan from heat once eggs are cooked.
  • Step #7 Let cool for a few mins.
  • Step #8 Punch down pizza dough.
  • Step #9 Roll out to 8" x 12" or so.
  • Step #10 Spoon potato mixture on dough, spreading to within 1" on each side.
  • Step #11 Roll up dough from 12" side, jelly-roll fashion, tucking in sides.
  • Step #12 Pinch dough together to hold in ingredients.
  • Step #13 Place seam side down on parchment paper on baking pan, & bake this at 375 degrees for 20 mins.
  • Step #14 Cut into one inch pieces.
