Crab-stuffed Catfish Recipe

Ingredients
  • 1 (6 oz) can crabmeat, drained, flaked & cartilage removed .
  • 2 tbsps shredded monterey jack cheese .
  • 1/8 tsp pepper .
  • 3 tbsps seasoned bread crumbs .
  • 1/8 tsp salt .
  • 1/8 tsp paprika .
  • 1 1/2 tsps mayonnaise .
  • 2 tbsps butter, melted .
  • 1 dash cayenne pepper .
  • 2 (6 oz) catfish fillets or white fish fillets

Directions
  • Step #1 Preheat oven to 425°F.
  • Step #2 In a bowl, mix everything except the catfish & paprika.
  • Step #3 Cut each fillet in half widthwise; place two halves in a greased 8-in.
  • Step #4 square baking dish.
  • Step #5 Press crab mixture onto fillets; top this with remaining halves.
  • Step #6 Sprinkle top with paprika.
  • Step #7 Bake, uncovered, for 22-26 mins or until fish flakes easily with a fork.
