Pesto Pork Loin Recipe

Ingredients
  • 2 tbsps minced garlic .
  • 2 tbsps sliced fresh thyme .
  • 2 tbsps seasoning salt .
  • 1/2 c basil pesto .
  • 6 bay leaves .
  • 1/4 c white wine vinegar .
  • 3-4 lbs pork loin

Directions
  • Step #1 Spoon pesto into an ice cube tray & freeze for at least an hr.
  • Step #2 (Freezing pesto in ice cube trays & keeping the pesto cubes in freezer bags is a great way to store pesto & to have in off-season).
  • Step #3 Preheat oven to 400F°.
  • Step #4 Take a long knife & cut two holes, evenly spaced, into the loin.
  • Step #5 Insert frozen pesto into the holes.
  • Step #6 Lay out bay leaves on pan & place pork loin on top.
  • Step #7 Rub loin with seasoning salt & spoon minced garlic over top.
  • Step #8 Chop fresh thyme & add vinager in a pouring container.
  • Step #9 Slowly pour a small amount onto the loin making sure not to cause the garlic to fall off.
  • Step #10 Place in the oven, checking every 15 mins & pouring more of the vinegar over the top.
  • Step #11 Cook for 2 hrs.
