Quick Veggie Pasties Recipe

Ingredients
  • 375 g plain flour .
  • 200 g danish blue cheese, grated .
  • 175 g onions, sliced .
  • Filling .
  • 175 g carrots, grated .
  • 125 g softened butter .
  • Pastry .
  • 250 g potatoes, sliced .
  • 25 g danish blue cheese, grated .
  • 1 1/2 tsps dried herbs .
  • 4 tbsps water .
  • 3 tbsps vegetable stock

Directions
  • Step #1 Heat oven to 200C (400F).
  • Step #2 Place flour & butter in a bowl & rub together.
  • Step #3 Add cheese & make a well in the middle of the mix.
  • Step #4 Add enough water to make a soft but not sticky dough.
  • Step #5 Knead dough to mix in cheese & divide into 4.
  • Step #6 Roll out dough & use a side plate to cut out a circle, repeat with the remaining dough.
  • Step #7 Mix all the ingredients for the filling together & divide between the pastry circles.
  • Step #8 Dampen the edges & pull together crimping the edges with your fingers to stick them together.
  • Step #9 Bake for 20 mins then turn down the heat slightly & cook for another 15 - 20 mins.
