Rosemary-apricot Chicken Recipe

Ingredients
  • 2 crushed garlic cloves .
  • 1 tbsp squeezed lemon juice .
  • 1 tsp dried rosemary, crumbled .
  • 1 tsp Dijon mustard .
  • 6 skinless chicken quarters .
  • 1 tsp salt .
  • 1/4 c apricot jam .
  • 1/2 tsp black pepper

Directions
  • Step #1 Heat oven to 350°.
  • Step #2 Mix salt, rosemary, pepper & garlic.
  • Step #3 Rub mixture into chicken.
  • Step #4 Place chicken, meaty side up, in pan & bake for 25 mins.
  • Step #5 Meanwhile, mix apricot jam, lemon juice, & mustard.
  • Step #6 Brush apricot mixture over chicken.
  • Step #7 Bake for 20 mins longer or until juices run clear.
