Haitian Legumes Recipe

Ingredients
  • 1/2-3/4 c tomato paste .
  • 12 oz frozen string beans, sliced into 2-inch pieces .
  • seasoning, powder (Adobo seasoning) .
  • 3 scallions, sliced fine .
  • 4-5 Maggi chicken cubes (chicken bouillon soup cubes) .
  • 1 chayote (militon) .
  • 20 oz frozen fordhook lima beans .
  • 2 garlic cloves, minced .
  • garlic powder, to taste .
  • 2 green bell peppers, sliced into 2-inch pieces, divided .
  • 1 eggplant, sliced into 2-inch cubes .
  • fresh parsley, sliced .
  • 2 lbs round steaks, trimmed of all fat & cut into 2-inch cubes .
  • 2-3 peeled & sliced carrots, into 2-inch pieces .
  • 1 large head of cabbage, remove outer leaves, core & chop into 2-inch pieces .
  • 1 (10 oz) box frozen sliced spinach .
  • haitian spicy vinegar (Pikliz my Spicy Vinegar of Haiti - Picklese (Pikliz)) .
  • salt, to taste .
  • 1 bunch watercress, sliced .
  • fresh ground black pepper, to taste .
  • 1/4-1/2 c vegetable oil .
  • 2-3 lemons, juice of

Directions
  • Step #1 Wash beef with lime juice, & salt; allow to marinate for 10 mins.
  • Step #2 Rinse with cold water.
  • Step #3 Make a paste from green pepper, green onions, parsley, garlic & vinegar; rub it on meat & let marinate for about 30 mins.
  • Step #4 Brown beef in small amount of oil.
  • Step #5 Add tomato paste, seasonings & water to cover the beef.
  • Step #6 Add sliced green bell pepper & place on top of the beef while it is cooking.
  • Step #7 Let the beef cook this until tender, continually adding tomato paste mixture as needed, so beef does not burn or dry out.
  • Step #8 After meat is tender, bring a large pot with a medium amount of water to a boil & start placing in the vegetables.
  • Step #9 First, add the cabbage & eggplant, next add the lima beans & green beans.
  • Step #10 Add the carrots, & chayottes - allow to steam until somewhat tender, then add spinach & watercress.
  • Step #11 Pour some oil over the vegetables, add the butter & 1 Maggi cube - continue to let steam till tender.
  • Step #12 Once tender, add the vegetables to beef mixture & stir everything together.
  • Step #13 Let cook for another 10-20 mins.
  • Step #14 Taste, adjust seasonings.
  • Step #15 If necessary, add another Maggi cube.
  • Step #16 Taste again, & adjust all the seasonings.
  • Step #17 This also goes very well with white rice & black beans or kidney beans, that have been cooked down & mixed in a mixer to make sauce pois(bean sauce).
