Southwest Tamale Pie Recipe

Ingredients
  • 1 1/2 c shredded cheddar cheese, divided .
  • 1 lb ground beef .
  • 1 egg .
  • 1 (1 1/2 oz) package taco seasoning .
  • 1 (15 oz) can stokes green chile sauce with pork, divided .
  • 1 c frozen corn .
  • 1 (2 1/4 oz) can sliced black olives, drained .
  • 1/4 c water .
  • 1 (8-12 oz) box Jiffy cornbread mix .
  • 1 c onions, sliced

Directions
  • Step #1 In a large skillet, cook beef & onion until beef is no longer pink; drain.
  • Step #2 Measure 1/2 c green chile sauce sauce; set aside.
  • Step #3 Add remaining sauce to ground beef.
  • Step #4 Stir in taco seasoning & water.
  • Step #5 Bring to a boil.
  • Step #6 Stir in corn & olives.
  • Step #7 Spoon into a greased deep dish pie plate or a 1.
  • Step #8 5 quart casserole dish.
  • Step #9 Sprinkle top with 1 c of cheese.
  • Step #10 In a bowl, mix corn bread mix, egg & the reserved chile sauce; mix well.
  • Step #11 Spoon over cheese layer.
  • Step #12 Bake 400F degrees for 25 min or until corn bread is done.
  • Step #13 Sprinkle top with remaining cheese.
  • Step #14 (I use extra cheese for the top).
