Denise's Saffron Vegetable Fried Rice Recipe

Ingredients
  • 1/4 c onions (finely sliced) .
  • 1 c long grain rice .
  • 3/4 c peas & carrots (tinned) .
  • 1/2 tsp powdered saffron .
  • 1 pinch msg, powder (optional) .
  • 2 c water .
  • 1/4 c sweet peppers (finely sliced) .
  • 2 tbsps vegetable oil .
  • 1/4 c carrots (finely sliced) .
  • 1 1/2 tbsps celery (finely sliced) .
  • 1 tsp sesame oil .
  • 1 tbsp oyster sauce

Directions
  • Step #1 Cook the rice with the saffron & two c water according to directions on the package or box.
  • Step #2 Bring to a boil over high heat & let boil for one min.
  • Step #3 Cover up saucepan & continue to cook this until all the water has been absorbed & the rice is cooked (15 - 20 mins.
  • Step #4 ) Remove from heat.
  • Step #5 In a large & deep frying pan or wok, heat oil & sauté carrots, onions & sweet pepper until the onions are translucent.
  • Step #6 Add peas & carrots cook a min or two.
  • Step #7 Add the oyster sauce, msg, & rice to the vegetables & mix well.
  • Step #8 Turn off the heat & stir in the the sliced celery.
