Black-eyed Pea Hummus Recipe

Ingredients
  • 1/2 tsp salt .
  • 1/2 c fresh lemon juice (about 2 lemons) .
  • 3 garlic cloves, peeled .
  • fresh chives (optional) .
  • 1/2 tsp paprika .
  • 14 (6 inch) pita bread, quartered .
  • 2 (15 7/8 oz) cans black-eyed peas, drained .
  • 1 tsp ground cumin .
  • 1/3 c tahini (sesame-seed paste)

Directions
  • Step #1 Drop garlic through chute of food processor/blender with processor on; process 3 seconds or until garlic is minced.
  • Step #2 Add lemon juice & next 5 ingredients (lemon juice through peas); process until smooth, scraping sides of bowl every once in awhile.
  • Step #3 Serve with pita wedges.
  • Step #4 Garnish with fresh chives, if desired.
