Low-fat High Fiber Blueberry Bran Muffins Recipe

Ingredients
  • 1/2 c whole wheat flour .
  • 1/2 tsp salt .
  • 1 egg .
  • 2/3 c brown sugar (I used 1/2 c) .
  • 1 tsp baking soda .
  • 1/2 c all-purpose flour .
  • 1/2 c unsweetened applesauce .
  • 1 c nonfat milk .
  • 1 1/2 c wheat bran (I used oat bran) .
  • 1 tsp baking powder .
  • 1/2 tsp vanilla extract .
  • 1 c blueberries (I added a sliced apple.)

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 Grease muffin c or use paper muffin liners.
  • Step #3 Mix together wheat bran & milk, & let this stand for 10 mins.
  • Step #4 (I didn't do this & muffins turned out fine.
  • Step #5 ).
  • Step #6 In a large bowl, mix together applesauce, brown sugar, egg, & vanilla.
  • Step #7 Beat in bran mixture.
  • Step #8 Sift together all-purpose flour, baking powder, baking soda, whole wheat flour, & salt.
  • Step #9 Stir into bran mixture until just mixed.
  • Step #10 Fold in blueberries.
  • Step #11 Scoop into muffin c.
  • Step #12 Bake in preheated oven for 15 to 20 mins, or until tops spring back when lightly tapped.
