Shrimp And Pea (or Green Pepper) Frittatas Recipe

Ingredients
  • salt .
  • 1/2 c sliced red onions .
  • 2/3 c finely grated parmesan cheese .
  • 3/4 lb raw peeled shrimp, peeled, tails off, sliced .
  • 8 large eggs .
  • 1 tbsp cooking oil .
  • pepper .
  • 1 c frozen peas (or sliced green pepper) .
  • 1/2 c milk

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Heat oil - add shrimp.
  • Step #3 heat until they just turn pink - remove this from oil with slotted spoon to save the oil - place shrimp In a large-ish bowl - set aside.
  • Step #4 return pan with oil to heat & cook onions until opaque - approximately 5 - 6 mins on medium heat.
  • Step #5 add to bowl with shrimp.
  • Step #6 Add frozen peas or peppers or combination of both, parmesan chese, salt & pepper - mix well.
  • Step #7 Grease a muffin tin with non stick spray.
  • Step #8 divide the mixture evenly between 12 muffin tins.
  • Step #9 in a separate bowl beat eggs & milk together - (remember that about room temp eggs & milk will rise a little higher than cold).
  • Step #10 Use a soup ladle & ladle egg mixture evenly over the 12 muffin c.
  • Step #11 Bake for 35 mins.
  • Step #12 remove pan from oven & let rest for 5 mins.
  • Step #13 use a knife to losen the edges & remove this from muffin tin.
  • Step #14 serve.
  • Step #15 This batch makes 12 frittatas - ONE frittata = 4g carbohydrates.
  • Step #16 This recipe also freezes well.
