Polenta Pumpkin Casserole Recipe

Ingredients
  • 1 c skim milk .
  • 1/3 c yellow cornmeal .
  • 1/2 tsp salt .
  • 1 (12 oz) can evaporated milk .
  • 1/4 tsp ground nutmeg .
  • 1 tbsp butter .
  • 1/2 c canned solid-pack pumpkin

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 In a medium saucepan, mix cornmeal, pumpkin, salt & nutmeg.
  • Step #3 Gradually stir in the evaporated milk & skim milk until mixture is smooth.
  • Step #4 Cook & stir over med-heat/flame until mixture thickens, about 10 mins.
  • Step #5 Stir in butter.
  • Step #6 Spoon mixture into a 1-quart casserole dish.
  • Step #7 Bake 30-35 mins, or until casserole is firm on top & lightly golden.
