Open Swordfish Burgers With Herb Aioli Recipe

Ingredients
  • 1 spring onion, sliced .
  • 4 swordfish steaks .
  • 50 g mixed salad greens .
  • 2 tbsps olive oil .
  • lemon wedges, to serve .
  • 2 tsps Dijon mustard .
  • For the herb aioli .
  • 1/3 c good quality mayonnaise .
  • 2 tomatoes, sliced .
  • 1 tbsp lemon juice .
  • 1 tbsp sliced fresh tarragon .
  • 1 lemon, zest of, finely grated .
  • 1 garlic clove, crushed .
  • 1 tbsp sliced fresh chives .
  • 2 ciabatta rolls, halved .
  • 1 tbsp sliced fresh parsley

Directions
  • Step #1 Preheat grill or BBQ to high.
  • Step #2 Place fish in a bowl & cover with oil & lemon zest.
  • Step #3 Spice up to taste.
  • Step #4 Make the aioli in a small bowl by combining all of the aioli ingredients.
  • Step #5 Cook fish for 2-3 mins each side, depending on the thickness of the fillet, or until cooked to taste.
  • Step #6 Toast cut sides of the ciabatta & put on a platter.
  • Step #7 Top each with some salad leaves, tomatao slices & the cooked fish.
  • Step #8 Add a dollop of the herb aioli.
  • Step #9 Serve with lemon wedges.
