Spinach – Creamy Parmesan Recipe

Ingredients
  • 3 (10 oz) boxes frozen spinach (defrosted) .
  • 1 tsp coarse black pepper .
  • 2/3 c freshly grated parmesan cheese (2 handfuls) .
  • 1/2 small white onion (finely sliced) .
  • 2 (3 oz) bricks cream cheese

Directions
  • Step #1 Place spinach in microwave to defrost.
  • Step #2 Place the boxes on a dish to defrost the spinach, because the boxes will leak.
  • Step #3 While spinach defrosts, place cream cheese & onions in a medium sauce pot over low heat/flame.
  • Step #4 When cream cheese melts, add Parmesan & black pepper to the cheese.
  • Step #5 Drain spinach in a clean kitchen towel, wringing it out until dry.
  • Step #6 Stir spinach into sauce, season this with 1/8 tsp salt.
  • Step #7 Allow spinach to sit over lowest heat possible 10 mins, stirring every once in awhile.
