East-west Chicken Recipe

Ingredients
  • 2 tbsps oil .
  • cornstarch, for thickening .
  • 2 tbsps brown sugar .
  • 5 lbs chicken parts .
  • 3 garlic cloves, minced .
  • salt .
  • 1 c mushrooms, sliced .
  • 1/4 c rum .
  • 1/2 c worcestershire sauce .
  • 3 scallions, sliced .
  • 1 c water, hot .
  • pepper .
  • 1/4 c soy sauce

Directions
  • Step #1 Generously sprinkle the chicken with salt & pepper to taste.
  • Step #2 Mix the first 5 ingredient after the chicken & marinate the chicken in them in the refrigerator, covered for at least 1 1/2 hrs.
  • Step #3 Remove the chicken, reserving marinade.
  • Step #4 Brown the chicken lightly in the oil & add the brown sugar & hot water & let simmer briefly.
  • Step #5 Transfer to a roasting pan, sprinkle with salt & pepper & add marinade & bake uncovered at 350 degrees F.
  • Step #6 for 1 to 1 1/2 hrs.
  • Step #7 Add the mushrooms the last 15 mins of cooking.
  • Step #8 Drain off juice & thinken it on stove top this with a paste of some cornstarch & cold water.
  • Step #9 Serve with rice.
