Shallot And Chive Parisienne Gnocchi Recipe

Ingredients
  • 1 1/2 c water .
  • 4 tsps salt .
  • 5-6 large eggs .
  • 2 c sifted all-purpose flour .
  • 2 tbsps sauteed finely sliced shallots .
  • 1 c loosely packed shredded mozzarella cheese .
  • 6 oz unsalted butter .
  • 2 tbsps sliced chives

Directions
  • Step #1 Pate a choux method: melt butter in water with salt over med heat in a heavy bottomed saucepan.
  • Step #2 When butter is melted, remove this from heat.
  • Step #3 Add flour & stir this to mix.
  • Step #4 When mixed, return to heat & cook 5 mins, stirring constantly until batter gathers in a ball in the center of the pan.
  • Step #5 Remove from heat, let cool 5 mins.
  • Step #6 In a mixer, mix cooled mixture with shallots & chives.
  • Step #7 mix.
  • Step #8 with mixer running, add eggs one at a time, allowing them to be fully incorporated before adding the next one.
  • Step #9 Mix mozzarella cheese into batter.
  • Step #10 Fill a pastry bag fitted with 5/8in.
  • Step #11 tip with batter.
  • Step #12 Pipe into simmering water, cutting each gnocchi at the pastry tip when they are approximately 1 inch long.
  • Step #13 Allow to cook through.
  • Step #14 Drain on paper towels.
  • Step #15 When all gnocchi have been cooked, heat a pan with oil.
  • Step #16 Sauté gnocchi until browned.
  • Step #17 Serve with parmesan cheese.
