Cinnamon Roll Coffee Cake Recipe

Ingredients
  • 3/4 c sugar .
  • 1/2 tsp table salt .
  • 1/4 tsp table salt .
  • 1 1/2 tbsps ground cinnamon .
  • 4 tbsps unsalted butter, sliced .
  • 1/4 c heavy cream .
  • 1/3 c all-purpose flour .
  • 1/2 tsp baking soda .
  • 1 c sliced pecans, toasted .
  • 1/4 c low-fat vanilla yogurt .
  • 3/4 c brown sugar .
  • 1/2 c unsalted butter, softened .
  • 2 eggs .
  • 1 pinch salt .
  • 1 1/2 c all-purpose flour .
  • 1/2 c buttermilk .
  • 1/2 tsp baking powder .
  • 1/2 c brown sugar

Directions
  • Step #1 Preheat oven to 350°; coat a 9" pan with nonstick spray.
  • Step #2 Stir together brown sugar, cream, & pinch of salt for the caramel.
  • Step #3 Pour into prepared pan & spread to coat the bottom.
  • Step #4 Sprinkle top pecans over the caramel.
  • Step #5 Process brown sugar, cinnamon, butter, flour, & 1/4 tsps salt for the streusel in a food processor/blender.
  • Step #6 Pulse until small clumps form; set aside.
  • Step #7 If you don't have a food processor/blender, do it by hand.
  • Step #8 Whisk buttermilk, yogurt, & eggs together.
  • Step #9 Sift flour, soda, baking powder, & 1/2 tsps salt together.
  • Step #10 Cream butter & sugar with a mixer just until mixd.
  • Step #11 Alternately add dry & wet ingredients, starting & ending with the dry.
  • Step #12 Blend each addition just until incorporated.
  • Step #13 Spread half the batter over the caramel, then sprinkle with half the streusel.
  • Step #14 Carefully spread remaining batter over that & top this with remaining streusel.
  • Step #15 Bake 40-45 mins, or until a toothpick comes out clean.
  • Step #16 Cool cake for 5 mins on a rack, then run a paring knife around the sides to loosen.
  • Step #17 Invert onto a serving platter while hot, then let cool slightly before slicing.
  • Step #18 The top is a little sticky, so use a sharp thin bladed knife to cut.
