Lemon Syrup Banana Bread Recipe

Ingredients
  • 2 oz butter .
  • 1 pinch bicarbonate of soda .
  • 1 c bananas, mashed ripe .
  • 1 c self raising flour .
  • 2 eggs .
  • 1 pinch salt .
  • 1 c plain flour .
  • 1/4 c sugar, extra .
  • 3/4 c sugar .
  • 1 small lemon

Directions
  • Step #1 Melt butter carefully.
  • Step #2 Do not have the melted butter too hot as it will cook the eggs when added to them.
  • Step #3 Add to sugar & eggs & beat well until thick & fluffy.
  • Step #4 Add banana & grated rind of the lemon & beat thoroughly.
  • Step #5 Sift flours, salt & bicarbonate soda together.
  • Step #6 Add to creamed mixture.
  • Step #7 Spread evenly in greased & floured loaf tin.
  • Step #8 Bake in a moderately slow oven at 150 degrees centigrade for 50 - 60 mins When loaf is ready, take out of oven & leave in the tin.
  • Step #9 Stir 1/4 c sugar extra together with juice of the lemon & extra rind if desired in a small saucepan until sugar is melted.
  • Step #10 This step can be done in a microwave.
  • Step #11 Pour syrup over warm loaf in its tin when just out of the oven.
  • Step #12 Make sure syrup glazes top surface & drizzles down the sides.
  • Step #13 Leave to cool & for the syrup to be absorbed.
