Aloo Gobi Ala Arty Chokes Recipe

Ingredients
  • 1 tbsp ground coriander .
  • 1 tsp salt .
  • 1 tomato .
  • 1 tsp lemon juice .
  • 1 tbsp ginger .
  • 3 potatoes .
  • 1/2 c frozen peas .
  • 1 tsp curry powder .
  • 2 tbsps butter .
  • 2 tbsps oil .
  • 1 tbsp ground cumin .
  • 3/4 c plain yogurt (or soy yogurt) .
  • 1/4 c soy milk (or cream) .
  • cilantro .
  • 1 head cauliflower .
  • 1 tbsp turmeric .
  • 2 garlic cloves .
  • 1 onion .
  • 1 chili pepper

Directions
  • Step #1 Start with a large boiling pot of water.
  • Step #2 Peel & cube potatoes, put into boiling water.
  • Step #3 Break up head of cauliflower & place this in pot with potatoes.
  • Step #4 cut up 1 tbsp ginger, 1 chili pepper, onion, 2 cloves of garlic.
  • Step #5 when the potatoes are ready (you should be able to easily stick a fork in them & have them fall of the fork) strain & put aside.
  • Step #6 heat 2 tbsp of oil & 2 tbsp of butter or earth balance + some salt in a big pan/wok (the oil keeps the butter from burning).
  • Step #7 this may seem like a lot of fat but keep in mind this makes a lot of food.
  • Step #8 once heated add onion,ginger,garlic,chili pepper sprinkle salt over top.
  • Step #9 this helps sweat the onions.
  • Step #10 add 1 sliced tomato, 3/4 c of plain soy yogurt (or yogurt).
  • Step #11 & 1/4 c of soy milk (or cream).
  • Step #12 add potatoes & califlower in with the mixture.
  • Step #13 add 1 tbsp of turmeric, 1 tbsp groun cumin, 1 tbsp ground coriander, 1 tsp curry powder, 1 tsp of salt, stir in the spices.
  • Step #14 by now the mix should be yellow in color & fairly thick.
  • Step #15 add 1/2 c of frozen peas.
  • Step #16 chop cilantro & add to mixture.
