Ingredients
  • 1/2 c fresh cilantro, sliced .
  • 1 tsp salt, divided .
  • 1 c water .
  • 1/4 c fresh lime juice .
  • 1 c uncooked whole wheat couscous .
  • 1 1/2 c mangoes, cubed .
  • 1/2 tsp ground cumin .
  • 1/4 c red onions, sliced .
  • 2 tbsps canola oil .
  • 1 c pineapples, sliced

Directions
  • Step #1 Bring water & 1/2 t.
  • Step #2 of salt to boil in small saucepan & remove this from heat.
  • Step #3 Stir in couscous, cover & let this stand until water is absorbed & couscous is tender (about 5 mins).
  • Step #4 Fluff couscous with a fork, cool to about room temp.
  • Step #5 Meanwhile, oil, in a medium bowl, whisk together lime juice, cumin & remaining 1/2 t.
  • Step #6 of salt until mixed.
  • Step #7 Add mango, cilantro & onion, pineapple, toss to mix.
  • Step #8 Add couscous to fruti mixture, toss to mix & coat.
  • Step #9 Serve as soon as possible or cover & put in the fridge up to 1 day.
  • Step #10 Points figured for a heaping 3/4 Celsius per serving.
