Ingredients
1 pinch salt .
1/4 c strong brewed coffee .
4 eggs, separated .
1/2 c heavy cream .
6 oz high quality semisweet chocolate, cut into small chunks .
1/4 c dark rum .
1/4 tsp cream of tartar .
3/4 c sugar .
8 tbsps softened butter, cut into chunks
Directions
Step #1 Combine chocolate & rum in a small pot; nestle pot inside a larger pot filled with water & set aside to allow to melt.
Step #2 Beat yolks in another small pot until pale & frothy.
Step #3 Combine sugar & coffee in another pot; cook over med-heat/flame until dissolved, 5-6 mins.
Step #4 Pour coffee mixture into yolks in a stream, while whisking, set aside.
Step #5 Pour water into a large pot to a depth of 2".
Step #6 Heat over medium-low heat until hot but not simmering.
Step #7 Nestle pot with yolk mixture over pot & cook, whisking vigorouslym until thick & creamy, about 8-9 mins.
Step #8 Transfer yolk mixture to a clean bowl; beat with an electric mixer until cool; about 5 mins.
Step #9 Uncover chocolate mixture & stir; add butter & whisk until smooth.
Step #10 Fold chocolate-butter mixture into yolk mixture; set aside.
Step #11 Beat egg whites in a bowl until just frothy.
Step #12 Add cream of tartar & salt; beat to stiff peaks.
Step #13 Stir 1/4 of the egg whites into chocolate-yolk mixture; carefully fold in the rest.
Step #14 Spoon mousse into 6 serving c or dishes.
Step #15 Chill until set.
Step #16 Beat cream to stiff peaks; transfer to a pastry bag with a star tip.
Step #17 Pipe a rosette of cream onto each mousse.
