Abby's Pumpkin Cheesecake Recipe

Ingredients
  • 1 c whipped topping (cool whip) .
  • 1/2 tsp nutmeg .
  • 4 eggs .
  • 1/2 tsp salt .
  • 1 1/2 tsps vanilla extract .
  • 4 tbsps sour cream .
  • 1 1/2 c sugar .
  • 2 tbsps flour .
  • 1/2 c brown sugar .
  • 16 oz cream cheese .
  • 3 c graham cracker crumbs .
  • 1 tsp ginger .
  • 1 tsp cinnamon .
  • 2 c pumpkin .
  • 1/4 tsp ground cloves .
  • 1 c light cream cheese, 1/3 less fat

Directions
  • Step #1 Pre-heat the oven to 325F degrees.
  • Step #2 Coat 9 inch pie pan with Pam flour cooking spray.
  • Step #3 Press graham cracker crumbs into the bottom & side of pan.
  • Step #4 Cream together cream cheeses, then add pumpkin, sugars & sour cream, mixing well.
  • Step #5 Add flour, nutmeg, cinnamon, cloves, ginger, salt, vanilla, eggs & whipped topping.
  • Step #6 Bake at 325F for 45 min.
  • Step #7 Turn off oven & partially open the door letting the pie cool for 1 hr inside the oven.
  • Step #8 ** This makes one thick pie or two thin pies.
