Doris's Shrimp Salad Recipe

Ingredients
  • 1 lb cooked shrimp - peeled, deveined, & cut into thirds
  • 2 tsps lemon juice
  • 1 c mayonnaise
  • 1 small onion, minced
  • 6 small tomatoes
  • salt & pepper to taste
  • 1 stalk celery, finely sliced

Directions
  • Step #1 Combine shrimp, lemon juice, onion, salt, celery, pepper & one c mayonnaise in a mixing bowl.
  • Step #2 Refrigerate & chill the shrimp mixture for at least one hr.
  • Step #3 Cut the tops off of the tomatoes & scoop out their insides; chill until the shrimp mixture is well chilled.
  • Step #4 Scoop the shrimp mixture into the hollowed out tomatoes.
  • Step #5 Serve.
