Step #1 Bring the water to a boil in a medium pan.
Step #2 Add salt reduce heat to medium low.
Step #3 As soon as the water begins to simmer, start pouring in the cornmeal in a thin stream, very slowly while stirring constantly with a wooden spoon to prevent lumps.
Step #4 Once all the cornmeal has been added, keep the water at a simmer, & stir frequently.
Step #5 should take between 25-30 mins to fully cook Once it is cooked, it should pull away from the sides of the pot easily.

Step #7 Soft Polenta: Use polenta directly out of the pot, topped with sauce or vegetables as desired.
Step #8 scoop a good portion on a plate, let it sit for a min or two.
Step #9 Next top the polenta with a scoop of your favorite sauce.
Step #10 add grated Parmesan cheese to the polenta & sauce.
Step #11 Firm Polenta: After it is completely cooked, place on wooden board or a greased baking sheet 2 inches thick & allow to set.
Step #12 Cut into squares.
Step #13 Baked Polenta: Cut firm polenta into slices, place this in a buttered baking dish.
Step #14 Add favorite topping, bake this at 375 degrees F.
Step #15 til golden.
Step #16 Grilled Polenta: Cut firm polenta into squares, brush with oil & grill lightly on both sides.
Step #17 Fried Polenta: Cut the firm polenta into slices & fry in a few inches of hot oil til golden brown & crispy.
