Beef And Barley Vegetable Soup Recipe

Ingredients

1 (10 oz) can tomato soup (preferably low sodium) .
1 bay leaf .
1 tsp thyme .
1 1/2 lbs extra lean ground beef or extra lean ground turkey .
1 medium onion, sliced finely .
1 tsp parsley .
1/2 tsp pepper .
8 tbsps barley .
28 oz tomatoes (sliced) .
3 (10 oz) cans beef consomme (preferably low sodium) .
4 carrots, sliced .
2 c water .
3 celery ribs, sliced

Directions

Step #1 Brown beef & onion, drain any fat.
Step #2 Add remaining ingredients.
Step #3 Cook for a minimum of two hrs.
Step #4 or.
Step #5 After browning beef & onion you can also use your slow cooker (aka crockpot) on low for 7 -8 hrs.
