Beef And Barley Vegetable Soup Recipe

Ingredients
  • 1 (10 oz) can tomato soup (preferably low sodium) .
  • 1 bay leaf .
  • 1 tsp thyme .
  • 1 1/2 lbs extra lean ground beef or extra lean ground turkey .
  • 1 medium onion, sliced finely .
  • 1 tsp parsley .
  • 1/2 tsp pepper .
  • 8 tbsps barley .
  • 28 oz tomatoes (sliced) .
  • 3 (10 oz) cans beef consomme (preferably low sodium) .
  • 4 carrots, sliced .
  • 2 c water .
  • 3 celery ribs, sliced

Directions
  • Step #1 Brown beef & onion, drain any fat.
  • Step #2 Add remaining ingredients.
  • Step #3 Cook for a minimum of two hrs.
  • Step #4 or.
  • Step #5 After browning beef & onion you can also use your slow cooker (aka crockpot) on low for 7 -8 hrs.
