Summer Blackberry Cobbler Recipe

Ingredients
  • 1 c sugar .
  • 1/4 tsp salt .
  • 1/4 c dry tapioca .
  • Filling .
  • 1 pinch salt .
  • 1 egg .
  • 8 c fresh blackberries or frozen blackberries .
  • 1/2 lime, juice of .
  • 1/2 c cold unsalted butter, cubed .
  • 3/4 c sugar .
  • 1 c all-purpose flour .
  • 1 c sweetened flaked coconut .
  • 1/2 tsp baking powder .
  • 1/2 c pecans, coarsely sliced .
  • Topping

Directions
  • Step #1 Preheat the oven to 375.
  • Step #2 Toss berries with sugar, lime juice, tapioca, & salt in a bowl.
  • Step #3 Spoon into a 2-qt.
  • Step #4 baking dish.
  • Step #5 Combine flour, coconut, pecans, baking powder, sugar, & salt in a second bowl.
  • Step #6 Using your fingertips, knead in the butter until incorporated.
  • Step #7 Mixture should look like coarse sand.
  • Step #8 Blend in the egg, then arrange topping over the berries in clumps, covering them evenly.
  • Step #9 Bake the cobbler for 45-50 mins, or until topping is golden & crisp, & filling is thick & bubbly.
  • Step #10 Cool on a rack for at least 1 hr before serving.
  • Step #11 Serve with crème anglaise.
