Ingredients
  • 3 tbsps light mayonnaise .
  • 1 lb lean pork tenderloins .
  • 1 tbsp water .
  • 4 medium whole grain buns or mixed-grain hamburger buns .
  • 3 tbsps green onions, sliced .
  • 2 c packaged coleslaw mix .
  • 3 1/3 tbsps barbecue sauce, divided (equals 3 Tbsp plus 1 tsp ( I prefer Sweet Baby Ray's) .
  • 1 tsp apple cider vinegar .
  • black pepper, freshly ground, to taste

Directions
  • Step #1 Preheat oven to 450ºF.
  • Step #2 Line a shallow roasting pan with nonstick foil wrap (for easy clean-up).
  • Step #3 Or coat pan with cooking spray.
  • Step #4 Place pork in pan & brush with 2 tbsps of barbecue sauce.
  • Step #5 Roast until an instant read thermometer inserted in center of pork registers 160ºF for medium, about 30 mins.
  • Step #6 Transfer pork to a cutting board; cover loosely with foil wrap & let this stand 10 mins.
  • Step #7 Meanwhile, water, whisk mayonnaise, vinegar & pepper together in a medium bowl until smooth.
  • Step #8 Add coleslaw mix & scallions; toss to mix & coat.
  • Step #9 Slice pork into 20 slices.
  • Step #10 For each sandwich, place 5 slices of pork on the bottom half of each roll & drizzle with 1 tsp of barbecue sauce; top this with 1/2 c of coleslaw & cover with top half of roll.
  • Step #11 Yields 1 sandwich per serving.
