Balsamic Roasted Yams Recipe

Ingredients
  • fresh ground black pepper .
  • 1/4 c butter .
  • 3 large red skinned yams, peeled, cut into 1 1/4 inch dice .
  • 1 tsp kosher salt .
  • 1 tbsp golden brown sugar, packed .
  • 1/4 c balsamic vinegar

Directions
  • Step #1 Preheat oven to 400°F.
  • Step #2 Place balsamic vinegar & brown sugar In a large-ish skillet & bring to a boil over med-heat/flame, stirring until sugar dissolves.
  • Step #3 Reduce heat & let simmer 3 mins or until the mixture thickens slightly.
  • Step #4 Add butter & salt & stir until butter melts.
  • Step #5 Add yams to the pan, stir this to coat & season this with black pepper.
  • Step #6 Spread evenly on a rimmed cookie sheet.
  • Step #7 Bake 40 mins, or until yams are tender, stirring every once in awhile.
