Chicken Cacciatore And Polenta Recipe

Ingredients
  • 6 oz tomato paste .
  • 1/4 c fat-free low-sodium chicken broth .
  • 14 oz sliced mushrooms .
  • 1 bunch fresh basil .
  • 3 tbsps olive oil .
  • 1 c white wine .
  • 2 lbs boneless chicken breasts .
  • 1 large onion, minced .
  • 1/2 tsp thyme .
  • 1-3 garlic clove (depending on how much you like garlic)

Directions
  • Step #1 In cooker, heat olive oil then chicken, brown for approximately 5 mins, then add rest of ingredients.
  • Step #2 Close the lid & bring to pressure, lower heat & cook for the suggested time.
  • Step #3 My pressure cooker says on position 1, 21 mins.
  • Step #4 On position 2, 12 miniutes.
  • Step #5 Release the pressure & remove the lid.
  • Step #6 If you are not using a pressure cooker then simmer for approximately 1 to 1 1/2 hrs.
  • Step #7 (Watch your amount of fluids & add broth as needed) Serve over polenta (follow the directions on the poleta package).
