Ham And Potato Pancakes Recipe

Ingredients
  • 1/4 tsp salt .
  • 1 c cooked ham, finely sliced (about 4 to 5 oz) .
  • 2-3 tbsps vegetable oil .
  • 1/4 tsp black pepper .
  • 3/4 lb yukon gold potatoes, peeled, grated & squeezed dry (about 2 c) .
  • chili sauce (optional) .
  • 1/4 c green onions, finely sliced .
  • 1/4 c all-purpose flour .
  • 2 eggs, beaten

Directions
  • Step #1 Combine grated potatoes, green onions & eggs in large bowl; mix well.
  • Step #2 Add ham, flour, salt & pepper; mix well.
  • Step #3 Heat 2 tbsps oil in large heavy-bottomed skillet.
  • Step #4 Drop batter by heaping tbsp & press with back of spoon to flatten.
  • Step #5 Cook over medium-high heat 2 to 3 mins per side.
  • Step #6 Remove to paper towels to drain.
  • Step #7 Add remaining 1 tbsp oil if necessary to cook remaining batter.
  • Step #8 Serve pancakes with chili sauce.
