Atjar Tumis Djamur (mushroom Pickles) Recipe

Ingredients
  • 8 oz mushrooms, fresh sliced .
  • 1 tsp cumin powder .
  • 3 c white vinegar .
  • 3 oz shallots, slivered

Directions
  • Step #1 Heat vinegar & cumin in a non-aluminum pan until boiling.
  • Step #2 Simmer five mins.
  • Step #3 Place mushrooms & shallots in a small pan (not aluminum) & cover with a saucer & weight to hold it down.
  • Step #4 Pour vinegar mixture over mushrooms to cover.
  • Step #5 Return pan to stove & bring to a simmer.
  • Step #6 Simmer 10 to 15 mins or until mushrooms are just tender.
  • Step #7 Remove from heat & let mushrooms cool in the vinegar.
  • Step #8 Drain & put in the fridge until ready to serve.
