Shrimp & Andouille Sausage Jambalaya Recipe

Ingredients
  • 1/2 tsp black pepper .
  • 2 tbsps butter or margarine .
  • 2 (14 1/2 oz) cans sliced tomatoes, undrained .
  • 1 c uncooked long-grain rice .
  • 2 garlic cloves, minced .
  • 1 tsp dried thyme .
  • 1 tbsp sliced fresh parsley .
  • 1/2 c sliced green bell peppers .
  • 1/2 tsp chili powder .
  • 8 oz andouille sausages, sliced .
  • 1 1/2 lbs fresh jumbo shrimp, peeled & deveined .
  • 1 tsp sugar .
  • 1 (10 1/2 oz) can beef broth .
  • 3/4 c sliced onions .
  • 1/2 c sliced celery .
  • 1 c water

Directions
  • Step #1 In a Dutch oven, saute onion, green bell pepper, celery, & garlic in butter until tender.
  • Step #2 Add the next 9 ingredients; bring to a boil.
  • Step #3 Reduce heat; cover & let simmer until rice is tender, approximately 25 mins.
  • Step #4 Add shrimp & parsley; simmer, until shrimp are cooked, uncovered, approximately 7-10 mins.
