Garlic "fries" Recipe

Ingredients
  • 2 tbsps canola oil .
  • 1/2 tsp salt .
  • 3 large baking potatoes (approx 12 oz each) .
  • 3 garlic cloves, minced .
  • 1 tbsp fresh parsley, finely sliced (optional)

Directions
  • Step #1 Preheat the oven to 450°F Heat the garlic & oil in a small saucepan over med-heat/flame for 2 mins.
  • Step #2 Strain the garlic from the oil with a small mesh strainer, reserving the infused oil & setting the garlic aside in a dish.
  • Step #3 Cut the potatoes into 1/4-inch sticks (peeled or skins on, your choice).
  • Step #4 In a large bowl, toss the oil, potatoes & 1/2 tsp of salt.
  • Step #5 Spray a baking sheet with cooking spray & spread the potatoes onto it in a single layer.
  • Step #6 Bake until golden & crisp, about 35 mins.
  • Step #7 Remove potatoes from the tray with a metal spatula.
  • Step #8 Toss with parsley, reserved garlic, & extra salt, to taste.
