Garlic And Chilli Pickle Recipe

Ingredients
  • 50 g green chilies (less if you want it mild) .
  • 150 g green garlic cloves .
  • 20 g amchur (dried, green mango powder. You can also use pomegranate powder.) .
  • 25 g salt (to taste) .
  • 2 tbsps mustard oil .
  • 50 g garlic greens or garlic chives

Directions
  • Step #1 Peel & wash garlic cloves.
  • Step #2 Clean & wash garlic greens/chive.
  • Step #3 Destalk & wash green chillies.
  • Step #4 Place garlic, on a towel for a few hrs, chillies & chives in the sun, to dry out the water completely.
  • Step #5 Any leftover water will make the pickle go ‘off’ very quickly.
  • Step #6 Place garlic, chillies & greens together in a food processor/blender & let ‘er rip.
  • Step #7 They should not be too fine & retain a rough texture.
  • Step #8 Add salt, oil & amchur powder.
  • Step #9 Mix well & spread out on a plate.
  • Step #10 Leave out on a sunny window sill for a few hrs.
  • Step #11 Transfer to a clean glass jar.
  • Step #12 Tie a piece of cloth/old handkerchief on top, using a rubber band.
  • Step #13 Leave again on a sunny window sill, for a few hrs more.
  • Step #14 Remove cloth & replace with a screw top lid.
  • Step #15 This pickle will last for more than one year.
